I don't know if I can keep up with Rachael Ray. This is about her kazillionth cookbook, and once again, her meals are ready in about 30 minutes. This time, Ms. Ray has given us the option of making enough for either 2 people, or 4, or, 6, and even for 8. And not only does she offer recipes, but she also gives us menus to work with. Cooking can't be simpler so there's simply no excuse for not cooking. I always say, if you can read, you can cook. In this book we have the likes of: (for two) T-Bone Steaks with Arugula and Tomatoes, Creamy Sweet Pea and Pancetta Soup, and Crab Cakes with a Creamy, Grainy Mustard Sauce. Under meals for four you can try Chicken in Orange-Scallion-Sesame Sauce, or Milanese-Style Turkey Cutlets with Peppers and Basil. If you're cooking for six, choose among others, the Caution-Flag Chili or Hearty Sausage and Mushroom Stew over Polenta. For a crowd of eight, try Italian Chicken Pot Pie from the Boot, or Spinach-Artichoke Ravioli-Lasagna, or Lamb Meatballs in Gravy over Jasmine Rice, or Sausage and Tortellini Soup. I have to say I really fancy her Pepper-Crusted Tenderloins with Mushroom Marsala Cream and Roasted Asparagus. Partially illustrated. No nutritional guides.
