If this book doesn't give you the incentive to incorporate more grains in your diet, nothing will.  Lorna Sass says in her Introduction, "...I challenged myself to experiment exclusively with whole grains that cook in under 30 minutes.  I also challenged myself to cook as many meals as possible in only one pot."  My kind of cooking!  Fiber is an essential part of a healthy diet and a healthy body, and because we've been living in a "now" society and always want things quickly, our food has been stripped of its goodness in the name of convenience and time-saving.  Now we're paying for those "conveniences" with poor health in the form of obesity, diabetes, colon cancer and more.  Finally, people are waking up to the fact that not only do we need whole grains, they are actually seeking them out, and therefore a much larger selection is now available.  Ms. Sass eloquently explains all the grains and whole-wheat products we can and should be using, along with their health benefits.  We're offered recipes for Stand-Alone Soups (Farro Minestrone or Soba Noodle Soup with Asian Vegetables and Shrimp); Hearty Stews (Hominy and Kidney Bean Chili); Skillet Suppers (Quinoa and Mushroom Skillet Pie); Pasta Presto; Stove-top Casseroles and Pilaf Entrées (Farro with Italian Sausage, Escarole, and Sun-Dried Tomatoes); Dinners from the Oven; Main-Dish Grain Salads (Bulgur Salad with Tuna, Olives, and Feta); Grains on the Side (Curried Bulgur with Beets or Quinoa-Creamed Spinach); Breakfast and Quick Breads (Savory Mini-Loaves), and Puddings, Pies, Cookies, and Cakes (Butterscotch Tapioca Pecan Pie).
